Duck Potato (Sagittaria sagittifolia)
Overview
Duck Potato is a semi-aquatic perennial edible plant valued for its starchy tubers. I originally sourced mine from the now-closed Green Harvest nursery. This species is desirable as it does not set seeds and become weedy.
Growing Conditions
Duck Potato is easy to grow but requires shallow water, such as a pond, bathtub, or even a kiddie pool. It thrives in full sun and prefers a sunny position. This perennial is winter-dormant, and while I haven’t grown it in Katoomba, it appears to be frost-hardy.
Container and Patio Use
Being semi-aquatic, Duck Potato is perfect for water gardens, ponds, or container plantings with water retention. A large pot or tub can accommodate its growth while keeping the plant manageable. Ideal for patios, courtyards, or any water-feature area.
Edible Use
The starchy tuber is the edible part of Duck Potato. Always cook before eating—roast, fry, or bake. Remove the bitter skin before cooking. The tuber is relatively high in protein (4–7%), making it a nutritious addition to your diet.
