Sweet Potato Kvass

Kvass is usually a low alcoholic drink made with old bread. This one uses sweet potatoes and is equally easy to make. At the moment it is still sweet like a lemonade. The recipe is very easy and only needs two ingredients:

Ingredients:

  • 360 (approx.) grams sweet potatoes coarsely grated
  • 150 gr sugar
  • 2 litres water

 

Procedure:

  • Combine ingredients in a jar.
  • Let it ferment 2-4 days, stir once a day
  • Strain in airtight bottles, leave headspace for the pressure, let ferment for another 2-4 days and then refrigerate for up to 2 weeks.
