Sweet Potato ‘Northern Star’, Ipomoea batatas

Sweet potato ‘Northern Star” is bred to produce in cooler climates. That does not mean that this sweet potato can withstand frost, but plantlets could be overwintered inside. the flesh of this sweet potato is white but the skin purplish.

The leaves of this perennial root crop can be eaten like spinach.

The plant serves also as a pretty groundcover.
